Why liquids need a different approach
A standard external sealer draws air from a bag held against a gasket, and any liquid near the opening gets pulled toward the pump. Soups, sauces, and marinades are exactly the foods that defeat that design. Chamber machines solve this by placing the entire bag inside a vacuum chamber, so the pressure drops evenly around the bag and liquid stays put instead of being sucked toward the seal.
Chamber machines and their footprint
Chamber vacuum sealers dominate this slice, and they range from compact countertop units with a 6L chamber to larger commercial models with 1.5 HP pumps and double 17 inch seal bars. The chamber size determines what fits inside: a 6L chamber handles a single portion or a small bag, while a 25L unit takes larger batches or multiple bags at once. Seal bar length matters too, since it sets the maximum bag width you can run.
When a chamber machine is the wrong choice
Chamber sealers are heavy, take up real counter space, and cost more than external units, so they make little sense if you mostly seal dry goods or solid portions. If you are sealing dry pantry items or frozen solid foods, an external sealer with a moist mode handles that without the chamber bulk. And if you only occasionally seal a liquid, a handheld unit or a simple external sealer used carefully may be enough.
Liquid sealing questions
Can a regular vacuum sealer handle soups and sauces?
A standard external sealer pulls liquid toward the pump and the seal can fail. Some units have a liquid or moist mode that adjusts suction, but they still struggle with thin liquids. A chamber machine is the reliable option for soups and sauces.
What size chamber do I need for sealing liquids?
The chamber size determines what fits inside, so a 6L chamber handles small portions and a 25L unit takes larger batches. Seal bar length sets the maximum bag width. Match both to the portions you actually seal.
What is the difference between an oil pump and an oil-less pump in a chamber sealer?
Oil pumps handle longer duty cycles and are common in commercial models. Oil-less pumps need less maintenance but may run hotter during extended use. Both pull a vacuum effectively for home and light commercial work.
Do chamber vacuum sealers work for marinades?
Yes, chamber machines handle marinades because the liquid stays inside the bag under even pressure. Some models include a quick marinate function that cycles the vacuum to speed up infusion. That is a common feature on units built for wet foods.
