What sous vide sealing demands from the machine

The chamber units pull a stronger vacuum because the whole bag sits inside the chamber, which also lets you seal liquids and wet marinades without them getting sucked toward the pump. External sealers in this slice handle the job too, but they work best when the food is relatively dry at the sealing edge. The 95kPa models with dual-pump and double heat seal are built for that stronger pull, and the touch-display versions add a digital timer for repeatable cycles.

Forms, sizes, and when this is the wrong tool

The chamber sealers here come with 10.25 inch seal bars for 10 by 13 inch bags, or double 17 inch bars for larger batches, and the bodies are black, blue, or gray. External units in the 6L range and handheld pumps also appear, though a handheld pump is a poor fit for sous vide because it cannot pull enough vacuum for a long cook. If your sealing is mostly dry pantry goods or you never cook below boiling, the extra seal strength and liquid handling of these machines is more than the task requires.

Quick answers

Sous vide sealing questions

Can I use an external vacuum sealer for sous vide?

Yes, the external models rated at 95kPa with double heat seals are built for it. The key is a strong vacuum and a seal that holds through hours in water. A handheld pump will not pull enough vacuum for this use.

Why do chamber sealers show up for sous vide?

A chamber sealer pulls vacuum around the whole bag, so liquids and wet marinades stay put instead of being drawn toward the pump. That makes it easier to seal saucy or brined foods for a water bath. The oil-pump models in this slice are built for that heavier duty.

What bag size do these machines take?

The chamber units here use 10 by 13 inch bags with a 10.25 inch seal bar, or larger bags with the double 17 inch bars. External sealers take roll or pre-cut bags sized to their sealing width. The 6L units are on the compact end.

Do I need a double heat seal for sous vide?

A double heat seal gives two parallel seams instead of one, which adds a backup if the first seam has a flaw. For long low-temperature cooks that extra margin is useful. Several external and chamber models in this slice include it.
